I love this cake and I love making it. Pineapple has always been my favorite and when I'm in the mood for some cake too this is what I make! There are many different ways people choose to make this and as I was looking online some make it with one layer while others make it with two. Growing up my mom always made it with two so that is the only recipe I know and have grown to love. Try making it some night if you haven't had it already it is absolutely delicious!
You should allow yourself at least an hour or two when making this. It will also need to bake for 40 miniutes.
What you will need...
- 1 jar of cherries. (Which ever brand you prefer)
- 1/4 cup of butter
- 1/2 cup of brown sugar
- 1/2 cup of coconut
- 1 can of sliced pineapple
- 1 can of crushed pineapple
- 1 package of yellow cake mix
Directions...
Preheat your oven to 350 degrees. Then melt two tablespoons of butter on both the sides and bottoms of your 9 inch round cake pan. Next sprinkle 1/4 cup of brown sugar on the bottom of each of your pans. In one of your pans sprinkle some coconut over your brown sugar. Lay out your pineapple rings in a single layer on top of the coconut and brown sugar. Make sure you place a cherry in each one of the rings! In your next pan spread your drained crushed pineapple overtop of the brown sugar. Then you will need to mix your cake mix as directed on the back of the package, while you are doing that substitute the pineapple juice for the water. Once mixed divied the batter equally into both pans. Don't forget which pan had the rings in it! Finally you are ready to place your creation into the oven and allow it to back for 40 to 50 minutes (until done). When the two cakes are done baking let them both cool for about 20 minutes. While the bottom of the cake pan is still warm take the cake with the crushed pineapple in it and place it onto a serving platter. Next place your next cake with the rings flipped on top of your other cake. Cut and enjoy!
